Pumpkin Seed Sunbutter Cookies (Vegan, GF, Nut Free)

  • 1 TBSP ground flaxseed
  • ¼ cup Red Palm Oil
  • ¼ Cup Sunbutter
  • ½ Cup Sucanat
  • ¼ cup coconut sugar
  • 2 tsp Vanilla
  • ½ tsp baking soda
  • ½ tsp celtic sea salt
  • 1 cup gluten free oats (ground into flour)
  • 1 cup pumpkin seeds (ground into pumpkin meal)
  • *Optional - ¼ cup add ins*
  1. Preheat oven to 350F (180C). Line a baking sheet with parchment paper.
  2. In a small coffee grinder/blender, grind flaxseeds into fine meal.
  3. Place ground flaxseeds in a small dish and add 3 TBSP water and set aside
  4. In a high powered blender grind oats and pumpkins seeds together until a flour forms.
  5. In a medium bowl, combine red palm oil, sunbutter, sugar, salt, vanilla and flax egg - mix well.
  6. Then add baking powder and baking soda, stir until combined
  7. Transfer ingredients from medium bowl into blender with oat/pumpkin flour. Set aside bowl.
  8. Use batter setting, or lightly blend all ingredients together.
  9. Remove all batter from blender and place back into medium bowl.
  10. Form dough into 1.5 inch balls (give or take). Place balls on baking sheet with 2-3 inches space, to allow them to spread out while baking.
  11. *I made my cookies a bit bigger, so they took a little longer to bake, gauge the baking time on the size of cookies you make. Mine took 14min and I made 14 cookies.
